Greek Yogurt Cheesecake

Ingredients:

2c. non-fat plain Greek yogurt (I like Trader Joe’s brand)
½ c. sugar
2 eggs
2 tsp. vanilla extract

Directions:

  1. Preheat oven to 350.
  2. Blend ingredients together in food processor until smooth.
  3. Pour filling over crust and bake in oven for 30-35 minutes. The edges should start to pull away from the sides of the pan.
  4. Chill in fridge for several hours before serving.
